THE WINEYARDS

CHARACTERISTICS

The vineyards of San Cassiano are alternated with the olive and fruit orchards and share the same multiple elements of exposure, altitude and terroir, making each wine unique. Ten hectares are divided into about twenty vineyards, all of which are immersed in an ideal vegetative equilibrium, thanks to a perfect climate and a properly calcareous and well-drained land.

CULTIVATION

Respect for tradition and the desire to experiment. The work of hands, head and heart. Each San Cassiano vineyard tells this story: working in the vineyard is a lifestyle, even before it becomes work. It took many years to obtain the first results: but then, everyone knows that perfection is not in a hurry.

HARVEST

We have chosen not to transform all of our grapes, but only the ones of the most mature vineyards, in order to guarantee the absolute excellence of the results. Additionally, the harvest takes place with manual techniques, which allow us to control the quality and level of ripeness of each individual bunch of grapes, directly on the vine.
